1. Kol, Marylebone
Noma-trained chef Santiago Lastra is renowned across the globe for his refined take on the flavours of Mexico, crafted using solely British ingredients. With one Michelin star, and a place at number 49 on the World’s 50 Best Restaurants list ahead of 2026’s list refresh, Kol and its seasonal seven-course tasting menu calls for a sense of occasion – or can just as easily conjure one.
Beware, though: there’s no guacamole here. Instead, expect complex, delicate, beautifully-presented riffs on traditional, recognisable dishes such as tacos, tamales and ceviche, as well as plenty of surprises, including an ant-dusted ice lolly. Booking is mandatory and competitive, so if you can’t get a table, try Lastra’s more casual restaurant, Fonda, in Mayfair, where the beef short rib served with silken mole and warm tortillas is a very worthy consolation prize.

2. Tacos Padre, Borough Market
Nicholas Fitzgerald takes Mexican food very seriously. You’ll find the Pujol-trained Irish-Spanish chef in the buzz of Borough Market serving a wide variety of not-quite-traditional and entirely gluten-free tacos at lightning speed. Flavour-packed mainstays include juicy pork carnitas with crispy chicharon and x-ni-pec pickled onions, and a beer-battered cod with morita-chilli spiked slaw loosely inspired by the best of Baja.
