It’s no surprise that Chef Romain Meder’s first restaurant, Prévelle, received a Michelin star less than a year after its spring 2025 opening. The visionary chef worked alongside Chef Alain Ducasse at Plaza Athénée for nearly two decades. One step into this bright and airy left bank address and you’re greeted by the chef himself within the restaurant’s very soul – the open kitchen. The multi-course dining act awaits on the upper floor, where clay-and-stone furnishings and herringbone parquet flooring nod to nature and heritage, the driving forces behind Meder’s menu. Seasonal vegetables plucked straight from the terroir play leading roles in every course, with dishes including green asparagus, hemp and rockfish jelly, or artichoke and almond, with a side of brill. Every earthy concoction from Meder’s homemade kombucha and green juice to his ripe and fruity desserts honours the land.

Marsan**

Hélène Darroze returned to her Basque-Landes roots when she planted Marsan in Paris’s Left Bank in 2019. Two Michelin stars followed in only two years. Named after her home region in Southwest France, every bespoke dish served on custom crockery is a celebration of her life and travels. Signature savoury plates recalling journeys in India, Japan, and Vietnam seamlessly blend with France’s finest produce from land and sea – always dressed in fresh herbs and flowers. Dining settings include a six-metre long communal table for 22 set on the ground floor and backlit by an enviable wine collection, a more intimate slate grey table, the six-seat kitchen-facing Chef’s Table on the first floor, and the light-infused main dining room. Every sleek space, conceived by French architect Patrice Gardera, connects to Les Landes. In between courses and a tasting of her very own Armagnac, take note of the personal photos and souvenirs that make Marsan feel like a journey straight to Hélène Darroze’s childhood home.

Every artisanal detail within the organic and uncluttered space at Datil – from the ceramic plates that adorn the tables to the bar composed of leather scraps – hints at chef Manon Fleury’s unflagging theme. This former head chef at Le Mermoz, who opened her Michelin-starred Haute Marais hideaway in 2023, is driven by sustainable, seasonal, and plant-oriented dining. Along with her five female co-chefs, led by Fleury and Laurène Barjhoux, stories are told through the colours, textures, and tastes of predominantly plant-based produce. And with barely any waste. When animal protein makes an appearance, the preparation is equally exacting, sourced from select farmers and fisheries. The impeccably garnished plates, paired with natural wines, might include cherry soup or Swiss chard with skate, depending on the season.
