Best for: sit-in pastries

More restaurant than bakery, The Palmerston is often overlooked on similar guides, but I’m here to make a case for it. While it isn’t primarily a bakery (it majors in very delicious lunches and dinners if you’re interested), its vinoisserie really is excellent, and it’s a nice place to sit in with a coffee and a croissant, soaking up the cheery service and buzzy bistro environment. After 11am it’s takeaway only, which is great if you’re looking to explore the city, snack in hand. Things are regularly changing here, but a perennial favourite is the pain suisse, with its intricate layers of dough that crisp on the outside and go soft in the centre, all wrapped around a classic chocolate and custard filling. Sometimes the team here collaborates, so they’re worth looking out for, working with other local restaurants on limited-edition serves, like a recent cherry and black sesame kouign-amann dreamt up by the chefs behind Mirin in Leith.

Dune Bakery

Best for: pastries with a view

Overlooking the River Forth and its UNESCO-listed bridge, this waterfront cafe is worth the journey to the outskirts of Edinburgh. Fronted by experienced baker Lewis Gill, Dune blends classic pastries with creative fillings for its ever-changing menu. Each weekend, the team offers a new range of limited-time-only specials, from Eton mess buns to white chocolate and pistachio escargot puffs. The shop also specialises in vegan bakes, with an extensive selection of plant-based options. There are some cosy indoor seats, but most visitors opt for the benches outside, enjoying the peaceful view as they tuck into their sweet treats.
