Chef Douglas McMaster brought his zero-waste restaurant Silo from Brighton to East London in 2019 and shook up the sustainable food scene in the capital. McMaster was well and truly ahead of the green curve with his innovative approach to cooking based on the simple but quite out-there idea of not using a bin in his restaurant.
